I am not 100% sure if this is related, but I have a couple friends that worked in the Swire Group (CX is part of Swire) and according to the group policy they are not allowed to have anything that can cause environmental damage or those controversial dishes, such as abalone, shark's fin, bird's nest and something along that line when it is related to the Swire group activities.

So for that matter, I don't think CX has ever served those exotic dishes in first class (probably beside caviar) and don't think CX Chinese food offering has changed substantially in the past years. And for those that do not know, the beauty of Chinese cooking is to use the simple ingredients to make it an amazing dishes. Sometimes, its the technique counts, not just the ingredients.
