Champagne

Cuvée Rare, Champagne Piper-Heidsieck, Frankreich
There is no denying the origin of this top Cuvée, which comes from the chalky limestone soils of the Champagne region, east of Paris. This is a real classic, characterized by aromas of ripe citrus fruit, pears and delicate elder blossom. The terrior of Champagne is echoed in the subtle minerality in the mouth, while the elegant and very fine mousse can be attributed to long lees contact after the second fermentation. This Champagne is a most sophisticated pleasure.

Monthly Proposal

2000 The William Wine, Graham Beck, Südafrika
The wine region at the Cape of Good Hope is a true paradise with its whit villas in the Dutch Cape style, blue sky and rich green. The first Dutch settlers were well aware of the potential of this region and produced delicious wines which soon awoke the interest of Old Europe. Napolean Bonaparte even took his favourite Constantia wine with him to his exile on Elba. The mild climate and range of soil types provide optimum conditions for vine growing. Innovative growers like Graham Beck have seized their chance and using protective modern wine-making techniques are producing outstanding wines. The best example of this is “The William Wine”. This top Cuvée from Cabernet Sauvignon and Pinotage is produced not only from two different grape varieties, but is also made up of grapes from different terroirs as the vineyards are located both in Stellenbosch and Franschhoek. The result is a stunning red wine with an intense bouquet reminiscent of figs and plums, dark chocolate and caramel, and on the palate it finishes with a complex finale.

White Wine

2004 Keltic Terre, Pinot Blanc Spätlese trocken, Krug’scher Hof, Deutschland
Rheinhessen has become noted of late not only for the classic variety Riesling, but also for modern wines made of varieties such as Pinot Blanc. Keltic Terre is a typical example. It is fermented at low temperatures in order to preserve the fruit, and its aromas of grapefruit and lemon grass are most seductive. The picture is completed by the wine’s full taste in the mouth balanced by refreshing acidity.

2002 California Chardonnay, De Loach, USA
The cooling influence of the Pacific Ocean on the climate allows Chardonnay to develop its optimum quality potential. This is certainly true for the up-and-coming Russian River Valley, where most of the grapes for this elegant wine come from. This is a Chardonnay with aromas reminiscent of roasted hazelnuts and sweet almonds, with gentle notes of vanilla and a fine toasty character. On the palate the wine is rounded and smooth with good length on the finish.

2004 Cuvée Bonvin, Assemblage Blanc, Bonvin, Schweiz
The finest grape varieties from Valais are married together to produce this pale yellow wine with tinges of brilliant green. On the nose the wine is elegant yet intense at the same time, with aromas reminiscent of ripe peaches and grapefruit, as well as a little passion fruit and subtle hints of vanilla. In the mouth this Cuvée is most appealing, with balanced acidity and a very long aromatic finish.

Red Wine

2000 Il Longobardo Rosso, Provincia di Pavia IGT, Cantine di Casteggio, Italien
This Cuvée, consisting of the indigenous varieties Croatina and Barbera, plus the world-famous varieties Pinot Noir and Cabernet Sauvignon, was matured in barriques. The result is an outstanding red wine with a concentrated bouquet reminiscent of vanilla and morello cherries with a hint of bitter chocolate. On the palate, the wine is most appealing thanks to its ripe tannin structure and well-balanced finish.

1999 Château Bouscaut, Cru Classé, Pessac-Léognan, Frankreich
Soils of gravel as well as clay, sand and chalk provide the peferct terroir for the grape varieties Cabernet Sauvignon, Merlot, Cabernet Franc and Malbec. Maturation in barriques allows fine wines of power and elegance to be produced from these grapes. And thanks to its complex bouquet of berry fruit with a little toasty character, its ripe tannins and persistent finish, this Cru Classé is a real pleasure to drink.

Dessert Wine

2004 Silvaner Eiswein, Weingut Guntrum, Nierstein, Deutschland
To produce Eiswein, temperatures must be less than -7ºC, as only then are the very sweet grapes completely frozen. The grapes have to harvested and pressed while still frozen, in order to be able to achieve a high concentration of aroma and flavour. The result, in this case, is the outstanding winner of the Rheinland-Pfalz tasting, with its opulent, fruity bouquet, intense sweetness and perfectly integrated acidity which gives the wine freshness and elegance.

Eaux-de-Vie de Marc de Châteauneuf du Pape, Domaine Duclaux, Frankreich
This fine and aromatic Marc comes from one of the most renowned producers in Châteauneuf du Pape. With its origins dating back to the 16th century, the domaine has 12 ha in the best vineyard sites planted with Grenache, Mourvèdre, Syrah and Cinsault. Thanks to the age of the vines, which are now more than 50 years old, low yields and high wine quality are guaranteed. The pomace remaining from the wine is used to produce Eaux-de-Vie de Marc. The distillation is carried out traditionally with the foreshots, core and tailings separated out. Only the middle part, the core, with 63º - 67º alcohol, is used. The distillate is reduced first of all to 55º and later down to 42º alcohol prior to bottling. The distillate is stored in barriques for a while before it is bottled. The natural evaporation contributes to the reduction in alcohol. At the same time the Eaux-de-Vie obtains its amber-colored hue from the wood and is able to develop complex aromas. The maturation of an Eaux-de-Vie de Marc calls for considerable time and patience, but the resultant richness of flavour and fine character are worth the long wait.
