Never been there and don't know for sure but my colleagues tell me that in TLV they don't stamp your passport if you don't want them to just because of this reason. Either they stamp a piece of paper and you keep that as your proof or they just don't stamp you at all.

I'm sure plenty of folks will clear this up for you. Both of those are pretty common destinations.
