What about Madrid? While the Westin Palace gets mixed reviews, we had an awesome upgraded suite.
Great weather, great museums, good food and bars.
Close enough to go to Sevilla or Segovia. Sevilla is a great town for a few days.
Plus Spain is way cheaper than most countries right now.

But I like Rome as well.
