"Healthy" meals, and special meal requests on UA p.s.

I've had the "low fat" option selected on my itineraries for at least the past year. Generally UA is pretty good about remembering to board the special meal on both domestic and international flights, in fact I can't think of any they didn't have in recent memory. However, I've done 6 p.s. flights over the past 2 weeks (all LAX/JFK), and have YET to see it boarded. Note that I'm not that picky, I'm just trying to eat a little healthier than I would otherwise. (UA food accounts for a non-trivial percentage of my diet, I'm just over 120k BIS this year.)

In all cases, paid C or F.

Anyone else seen the same thing on p.s. flights in particular?

On a related note, what special meal requests generally yield the overall "healthiest" selections? (I realize this will be a matter of some opinion.)
