I don't know about Canadian laws around this, but did you fight back? I wouldn't have waited around for the next punch - down here, I'd be perfectly justified and legal to slam my carry-on over his head. You were too nice, and should have been far less 'Canadian' when the fracas started.
Are you pressing charges? I'd consider a suit against Air Canada as well, since from the story, their crew did nothing to intervene and control this couple (and protect you) in the earlier stages of this mess.
