Don't know about hostels but Mrs WF and I stay at the Silvermine Beach Hotel on the other side of Lantau from the airport. convenient to the ferry and the lantau buses are not that bad once you figure out where to catch them.

But the hills preclude any view of the city lights..........

Look around the web sites anywhere from about 650HKD to 1000 HKD double includes buffet breakfast - OK but not of great note.
