This depends on the agent that books your travel. Some will let you stop both directions, which the rules do not allow. When I did this trip with my AA miles, I was able to stop in HKG both ways. I originally planned on stopping just on the outbound. However, after I got to Australia, I went to a local CX office and changed my flight from HKG-LAX, which gave me another stopover in HKG.
