First off, Welcome to FlyerTalk! I hope the information provided here is of value to you.
I went back in February for a week and spent less than $2K all in, including flights from JFK, hotels, food and entertainment. Of course, I paid ~$600 for flights and ~$800 for my five nights hotel. Plus I ate a lot of street food and ~HKD$20-25 noodle soup bowls. And I did no shopping and little paid tourist things. I mostly rambled around town taking photos and whatnot, so my real costs were minuscule. And I'm sure that the rooming prices could be way less than what I paid. I had a small room in a hotel for 3 nights that was basically just big enough for the bed, shower and my suitcase in a corner. I didn't need more than that and the price was right.
More than anything else that the other posters have mentioned, I cannot imagine spending much more time in HKG than I did solely as a tourist. I even did a day trip to Macau to get a change of scenery. I'm sure I could have found a way to spend a few more days, but I'd have been pretty bored by the end. It is a wonderful city to see and experience, but not great to spend so much consecutive time in as a tourist, IMO.
