One of my very limited complaints about some HI's and IC's is that they appear to prepare the hot breakfast buffet the night before during evening service and then the relatively inexperienced breakfast staff often use the inadequate bain maries to rewarm. In some smaller HI's it appears to be the night porter who does this job!
This is particularly bad when they reheat the crispy greasy bacon and those small breakfast sausages all properties seem to be supplied with. If you are an early-bird it seems to me that more often than not, the hot buffet is cold and I once had food poisoning from a top - perhaps the top IC - from I believe a warmed up breakfast buffet. I feel the hot or should I say cold "English" breakfast buffet is an IC group weakness that I seem to find in almost every property I take breakfast. Or is it just me?
