It depends on the endorsement on the visa.

An "A" type Schengen visa without specific territorial endorsement is valid for airside transit through any Schengen airport.

A "B" type Schengen visa is valid for transit (inc. exiting airside if required) for upto 5 days through the Schengen area.

"A" type Schengen visas are usually issued with territorial or routing restrictions (eg. VALID FOR TRANSIT AT FRA BETWEEN BOM/JFK) but may be issued with universal validity.
