There are things like dynamic inventory management that at least oversee bookings and allocate seat inventory as needed. They overbooked the flight, they were aware that the flight was overbooked, and didn't handle it well as they could have.
Sounds like that's whathappened, and it looks like EK at least tried by procuring 40 more meals. But still, not having the flight catered is a big disappointment and unacceptable.
