Most the finer places either offer a separate vegetarian menu or will gladly prepare vegetarian items equal or superior to the carniverous stuff on the menu. One that comes to mind is Equinox in Dupont Circle--Todd Gray only uses the freshest local ingredients, which means his veggies are delicious.
