In some kiosks in Europe they do not accept credit cards but only debit cards. Even though it is still Visa, MC, Maestro, etc... it is a debit card. Could that be the problem with TrenItalia?
Once you get to Italy, I am sure you can pay with a credit card when you purchase a ticket at the office, not so sure if you purchase a ticket from the many machines.
I assume you tried raileurope.com but their prices tend to be very high, much higher than anything you can get locally.

edit: I double checked the site and it should accept visa, mc and amex....
maybe you can call Termini in Rome and ask them directly. They may be able to help.
