FYI, a UAL 757 is a two-class plane, with First Class and Economy. (Perhaps you are on a three-class plane on your return?)
In any event your best bet might be to sit next to a 1K, if possible, as FA's sometimes offer up an early meal choice to the seatmate of the 1K. Barring that, sit towards the front on 757 and towards the back in C on a 767, if meal choice is your primary factor.
