Doesn't matter. Wether the airline supplies the food or the passenger supplies the food the cost of fuel will be there.
To answer your question, add 25% weight in fuel to any extra weight the airplane lifts.
ie: you want 10,000lbs extra fuel at destination, leave your departure city with 12,500lbs of extra fuel.
ie: Want your passengers to eat an extra 1000lbs of food, add an extra 250 lbs of fuel.
This 25% is an approximate number for an average ocean crossing.
Your a/c type and length of flight will change this number.
