I'm sure there are things on an aircraft that can be subject to judgement, for example hydraulic leaks. I remember an MD-11 flight I was on being cancelled for a nose wheel hydraulic leak and watching out the gate window while the pilots and DFW engineers discussed the problem - it was clearly not an open and shut case. No hydraulic system will ever be totally loss free, but how do they decide when a leak is bad enough to pose a real risk? In the end I believe the pilot can say "I'm not flying that thing".
