There aren't any trains from Munich airport direct to Nuernberg, but a short trip by S-Bahn to Munich main station and then the ICE or the 125 mph RE train (much cheaper but half an hour slower than the ICE) should do it. There is also the possibility of taking the bus from the airport to Freising (the town right next to the airport) and a through RE train from there to Nuernberg.
