You buy a litre bottle of cider (the alcoholic stuff) which gets turned upside down into the wooden frame. Press a button and the cider gets shot up a metal pipe and squirted into a glass below - approximating this:

The cider is initially flat (good Asturian ciders are), but the pressure from the pouring process makes it fizzy.
