I think that the Park Hyatt and Westin in Sydney (more so the PH, obviously, but it's location for work is a big downside) are beautiful properties. I haven't stayed in the Westin in Melbourne since my first visit right after its opening a few years ago, but at the time I remembering thinking that it was an excellent business hotel as well.
