From what I've read here, I always surmised CO's fleet planning to be rather simple: try not to leave with empty seats. If that means putting a 752 on a route instead of 762/764 so as to constrain supply, assuming that a 752 can fly the mission, then that's the way they go.
The 752 actually carries more people!
762: 25 BF, 149 Y = 174
752: 16 BF, 159 Y = 175
That said, the 762 carries more cargo and has more BF seats.
