All good choices. I would also recommend a Bosphorus cruise one afternoon. Relatively inexpensive (maybe $20) and if the weather's nice a very pleasant way to spend some time.

At night, the area of Taksim is jammed with partygoers crowding the many, many bars and restaurants.
