Why would you not be able to leave an infant safely restrained in a 5 point harness in a climate controlled environment for about 3 minutes? I've done that, and I've seen it done many times.
Sometimes you can get an FA to stand to there and watch the baby in its seat, but I never met one who would actually hold the baby, and 3 recent trips on DL suggest their FA's don't like any of the pax these days, let alone kids.
BTW, it may just be your phrasing, but it sounds like you are considering putting a safety seat in the middle seat: no can do. Safety seats can not block other pax from exiting their seats, so the seat needs to be either next to the window, or in a two aisle plane, sometimes they are allowed in the middle of the middle section (this seems to vary by airline).
