I can only comment on KOA and HNL since I have never been to LIH. The Waikoloa Marriott was great when I stayed there last year. It was still under construction but the beach there has great coral for snorkeling. The snorkel rental is included in the resort fee you pay at check in. We also had one Mai Tai included per day and their infinity pool is quite nice.

In HNL, unless you want to be around the nightlife of Waikiki, I had a much better time at the JW. The lagoons are great for enjoying the beach although there is not much in the way of restaurants there. It is about a 45 minute drive to Waikiki from this property, but I hear the Luau there is great and I took the catamaran cruise which was also a lot of fun.
