Each of these sleeping cars are staffed with a steward !!! He is responsible for welcoming his guests as well as serving breakfast (if thatīs included - depending on the booked class - otherwise it can be ordered against payment)
Plus he/she is responsible for the passengers comfort/safety during the stay onboard and handling the passport/immigration thing on international travel as well as handling the trainticket on behalf of the passenger!
Trains of course have conductors onboard. But if one is travelling over night in a sleeping car they wonīt disturb you because passengers hand over their tickets to the steward who will handle that with the conductor !
It is not common to give a tip to the sleeping car steward at all so itīs not expected by them. But if you like to tip i would recommend anything between 5 and 10 EUR (a 5 EUR bill seems to be really sufficient and certainly will make him/her smile ...) The amount has no relation to the length of the journey at all.
