Having been used to the Amtrak system, i wasn't sure what the procedure was on mainland Europe.
The blurb on the website says that you get brought a breakfast to your compartment in morning so is assumed that this would be the job of a steward rather than a conductor as they, as others have said, would be busy with tickets.
