I think in the bigger cities, the chaining of what used to be high-end standalone steakhouses (Capital Grille, as an example) will eventually take its toll on the mom and pops. But throughout North-Central Illinois, there is an acceptable "steaks and chops" restaurant or "supper club" in many of the smaller towns.

In fact, there are some restauranteurs who have headed for the smaller towns. The Uptown Grill in LaSalle, IL is an example. It's not "steaks and chops" per se, but it's definitely not Chili's either.
