I'm doing one of these in Dec.

I can tell you how to work around this. Suppose you want to fly to London from Boston and get a free NYC stopover on the return. Do this. Book a flight from Boston to NYC to London using your miles and returning only to NYC. Then call back and tell them about 30 minutes later you want to add a NYC to Boston return leg and just specify the date and time. This has been done to give me stopovers for stays of 1-3 days. IF someone says no.. just call back and try again and someone will do it. After the itinerary is confirmed just go to a ticketing office and get a paper ticket and now your ticket is as good as gold.
