But how is this considered as a YYZ-HKG flight when one has to change planes at YVR and the YYZ-YVR is not numbered as AC7?

It's not the same like CX889 nor AC33 originating from JFK & YYZ respectively where you have the same flight number & aircraft from beginning to the YVR stop to the end.
