I've been there in the fall. I'd suggest adding Luxor to the itinerary. I did a Nile cruise and wouldn't recommend it. I'd also recommend Abu Simbel, though it's a long way from Cairo. Alexandria is also worth seeing and is easy to get to by train from Cairo.
