Best gym - I have to vote Crowne Plaza New York Time Square. The gym is on 15th floor? and actually belongs to NY Sport Club but PC gold member has free access to the gym. It's the biggest gym I have ever seen in a hotel.

IC Miami downtown, gym is pretty good. It is big and often empty. More than enough free weights and machines. You feel like you workout in your own private gym.

IC Athens has renovated gym. Each cardio machine has a big buit in plasma TV screen, but they don't provide headset. You have to bring your own.
