I'd book 2 nights max in Lima - and then book a sightseeing tour of the city.

I recommend going to Arequipa and Colca Canyon. We really enjoyed seeing the condors soar.

You might do a search in the Trip Report forum on Peru. hauteboy wrote this report and Stewie Mac wrote this. I found both very helpful when I was planning my trip.
