If they think something isn't kosher, then they might ask whose account the SWU came from (doesn't get more basic than that); where that person lives (someone's legitimate giftee had a problem because the giftor had more than one address and giftee gave one not on the giftor's MP profile); how you know the person (family?, friend?, associate?); how old the person is (if profile says 30 and you better not say 55); etc. Whatever they can see on their screen about the "gifter's" profile, and perhaps more.
But there are too few reports of such incidents to know much about how they play out, because they are thankfully infrequent, the parties aren't FTers, or people simply like share such experiences. One would like to know the things that might throw red flags and cause UA personnel to question how you came to have an SWU that wasn't your own.
