It could be the reason on a long flight (longer than BKK-NRT) because the ice cream is kept solid by dry ice which might melt if a lot more isn't used than normal. I don't think that's the reason. They used to serve ice cream on the BKK/NRT route, and they still serve it on the longer NRT/LAX route.
Hopefully it was just a one-off thing. I like to have my ice cream
