To turn to your speculation, I would have to say that theory also falls into the highly unlikely category. Single engine landings and go-arounds are fairly benign things practiced every 6 months in the simulator. The 777 is also fitted with a Thrust Assymetry Compensator (TAC) which automatically compensates for the yaw caused by an engine failure. Even if the aircraft was operating with the TAC unservicable the remaining live engine has ample power to arrest the sink rate even on an imbalanced aircraft. The triple has a huge surplus of power at typical landing weights, and I have messed up enough single engine go-arounds in training to know there's enough power available in a twin jet on a single engine.
I was always under the impression that going from a low engine speed to full power took a bit of time for the engine to spool up.
