As Portland is well within 2 hours of Manchester, I am assuming you are looking for something a bit different for the last night. If you are willing to travel two hours, you might want to consider something in North Conway, NH. It will still be a drive (probably farther than Portland) but it is still within a two hour drive. It gives you the mountain scenery you miss on the coast.
I'd second that, with a thought that you should seriously consider getting from North Conway to I-93 (for MHT) via either the Kancamagus Highway or Bear Notch/Franconia Notch. (Whether you stay overnight in the North Conway area, or after the drive over the top in the Lincoln/North Woodstock area, is up to you. We've always enjoyed staying and (especially!) eating at the Woodstock Inn in North Woodstock.)
That said, there's a ton to do up there and you could easily fill a full week -- the White Mountains are a four-season vacation area.
Oh, and North Conway has LOTS of outlet shopping. This means (a) an empty wallet and (b) traffic. That said, the town has built a couple of bypass roads that will get you past the worst of the traffic south/east of the town center, so it's not as bad as it used to be if you want to avoid the siren call of the outlets.
