I agree with the above post: many American cities have this problem of nonprofessional service staff. Boston is particularly bad. Everyone is a college kid, waiting tables for a year or two.

On the other hand, New York (outside of the Times Square area) has quite a few places with lifelong service staff -- maybe related to the local institutions, like the doorman industry.
