Personally, I have stayed a few times at the FCO Hilton, and found it to be perfectly acceptable. The covered walkway from the hotel to the airport terminal takes 10 minutes absolutely max (and less if you are a fast walker). This would be the most convenient option. I think if you arrive at the terminal 75 minutes before departure time you will be fine in any case.
