I have been fortunate enough to recieve a half-bottle of wine and was very appreciative of it. I think it's more sad to see it get poured down the drain. I promise if you give me a partial (or even full!) bottle that you'll have made my day and will most likely receive a GTEM! Don't worry, I'll word it generically enough so as to not put you in any chance of getting into trouble.

While on the subject of wine, what do you do if catering fails to board a corkscrew? Do you all know the "dime trick?" I finally got to show an FA this trick last year and she loved it. IIRC, I scored a bottle on that flight as a sign of appreciation that the other winos in F didn't have to do without.
