I think Bill's flight was late (10-11pm), but his point was that many of the people on that flight (including him) had likely been flying all day and connecting from other flights and were therefore hungry, so it would be good of AS to serve some type of meal on this particular flight. (I know; I've connected at those late hours plenty of times myself in SEA to come home).
As I mentioned, there are some decent food options in SEA, so I probably would have just grabbed something from Dish D'lish or that Italian place I think is next to Qdoba, but I do see his point (and those shops may close early, too).
