This is what I've started doing...many times when I ask for champagne, FAs say, 'oh, you mean sparkling wine' and vice versa. If I ask for bubbly then they just assume I'm drunken airhead and bring me plenty.

Or, you could go the Posh Spice route and demand 'champers, darling'.
This usually works except for IAD-LAX last week on UA in J when I was told that they don't stock it for that route. That was a first.
