Doable but I'd book a limo (just as cheap and the driver has an incentive to use the shortest/quickest route). Central Rome to FCO isn't too bad a drive (not too difficult to get out to the highway) and Saturday AM should be quite light traffic wise. It'll be tight. Does your airline allow you to use web check in?
