Really, why not? This is how CO does it on their 777s which have 5 rows of 2x2x2 in the front cabin and 3 rows in the mid-cabin. Completely separate FAs/service. In fact, even on their 764s with 7 rows of 2x1x2 in one cabin, the back 2 rows are served separately from a rear galley.
I can't imagine that CX can serve 60 passengers from two carts?!?

See above... the cabins ARE served seperately.
Stick with 12A if you like window seats. Generally my preference is rows 12-15 D/G. On the Airbuses in LH J there really aren't any seats that stand out from the rest. The seats in the rear cabin except the first and last rows are also fine. Row 19 is missing a window if that's a consideration.
