I wouldn't go to woodbury as well - it is a tourist trap (plus, you pay tax on everything!) However, I'm not too kin on jersey gardens as well - it's a pretty boring mall and I would not describe it as a real outlet mall - prices are higher than woodbury. There are several other malls in jersey - this might help:

We were there a month ago, and it took us an hour from the time we got to the car to the timewe were out of the parking lot because of the crowds.
Unless you are looking for a very specific store that was only there, consider the outlets much closer to Newark, which won't be any picnic either the week before Christmas, but won't be like I can only imagine Woodbury will be.
