I think I would have asked for a refund in the difference of the coach versus business fare, and see what AA would have offered from there. You're the type of customer they can't afford to lose with the fare you're paying.
Did you call any of these issues to the attention of the purser/flight attendant as they were taking place? I would have walked to the galley and had a few words myself.
