There is only ONE authoritative listing of hotels in Greece. That's the website of
EOT, an agency of the Ministry of Tourism. It's not really very useful in terms of promoting the hotels (no pix or price info), but it's got virtually all of them and the opening months are displayed on the bottom left corner of a hotel's factsheet (though you'd better ring the hotel and check with them to make sure the information is current).

Give
Sky Express a call. They are a very small airline that nobody has ever heard of, but do operate quite a few flights from Crete in the summer. They haven't updated their winter schedule so I don't know whether they fly JTR-HER this winter, but it wouldn't surprise me if they had a couple of nonstops per week (as opposed to the daily summer flights).
With all that said, let me reiterate that I would avoid going to Santorini at anytime outside the May-Sept tourist season.
