You may be right... as the times I seem to remember the seat assignment updating for me probably involved me being offloaded and rechecked-in.

However, I would disagree that it shouldn't. My itineraries/reservations page should always show whatever your current seat assignment is, regardless of if you have checked in. And after you have flown the flight, it should continue to show what seat you actually boarded with.
