FWIW, Several years ago, I contracted an addition project for an airline caterer, Marriot at SMF. I had been involved in the restaurant/food service construction industry extensively for many years. I can attest that the standards of cleanliness and hygiene FAR, FAR exceed those of restaurants, and inspections are much more frequent and thorough. The environment inside a typical airline food caterer looks much more like a sterile laboratory, than a restaurant kitchen. I was told that food safety was of PARAMOUNT concern because of some of the food poisoning incidents, and liablity issues in general.
