This little thing called timezones springs to mind...the 178 doesn't leave JFK too early to be a killer, nor does it arrive too late in to LHR to get home/to a hotel at a reasonable hour. Leaving ~9am JFK, you arrive ~9pm UK. There's not much more of a window you can reasonably use to make it work.
The earlier (not daily) 172 is a bit too early for my liking ex-JFK. Though, as if to answer your point, this was a quite recent addition to (IIRC) the last timetable. So, indeed, there clearly is enough day flight demand to warrant an extra flight some days.
To the OP, another thing that'll work against you on a Sunday: I believe that's the only day the 178 isn't a 70J 744 but a 777. Even less seats up for grabs.
