Yeah, In-N-Out frys are horrible. Limp and greasy.
Except when ordered "well done" when they are brown, limp, and greasy.
I suspect it comes from using the wrong sort of potatoes (you gotta have the low mosture, high starch variety) and not keeping the oil hot enough.

While we can debate the proper cut of frys (steak, diner, shoestring, waffle, curley, etc.) and whether skin is removed or left on, the fundimentals still apply. A proper french fry should be crisp on the outside and fluffy/mealy on the inside, and have a pale golden brown color on the outside. It must be served hot, but drained of excess fat.

If you want to eat good frys with your burger (...and frankly a better chain burger...) go to Fatburger.
